Sap used to make maple syrup will be flowing soon

Friday marks the unofficial start of maple tapping season.
Usually the Waterloo Wellington Chapter of the Ontario Maple Syrup Producers Association along with the Elmira Maple Syrup Festival Committee would host a media event to tap the ceremonial tree, but obviously that didn't happen this year due to the pandemic.
“We are pleased that making maple syrup has been included in the list of essential services allowing producers to gear up for this spring's production.” Kevin Snyder, president of the Waterloo Wellington Maple Syrup Producers Association explained in a news release.
He said this time of year producers are busy in their woodlots and sugarhouses.
“We should start seeing sap flow when temperatures rise to 3+ degrees Celsius during the day – coupled with freezing temperatures at night. We are always closely watching the weather.” Snyder added.
