Elmira Maple Syrup Festival kicks off with more than 80K attendees expected

More than 80,000 people are expected to descend on Elmira for the annual Maple Syrup Festival.

“It’s the largest single-day maple syrup festival in the world,” said Steve Dressing, festival committee member and Pioneer Taffy Demonstration lead.

Dressing was on The Mike Farwell Show on Wednesday and was asked about his taffy work.

“It’s one of our signature events at the festival every year, we do the Pioneer Taffy Demonstration,” explained Dressing. “You can come see us boil syrup right in front of you, pour it over the snow, and twirl you fresh taffy on a stick for just two bucks.”

The Elmira Maple Syrup Festival has been going 60 years strong and attracts tens of thousands of people annually. Dressing said it’s family-friendly and there’s something for everybody.

“There’s a family fun area with pony rides, rock climbing walls, face painting, farm equipment for the kids to check out, and tons of local vendors.”

The pancake breakfast is beloved and runs from 7 a.m. to 2 p.m. — or while supplies last. There’s also a Craft Toy and Collectible Show from 8:30 a.m. to 4 p.m.

According to Dressing, the festival is a real labour of love for everyone involved.

“The (prep) work is endless. There’s a great team of committee members, volunteers, who spend months planning, organizing, and putting this all together. Without all of their hard work and dedication and volunteer time, we wouldn’t be able to do this.”

The 2025 Elmira Maple Syrup Festival is set to last throughout the day. Once it’s over, Dressing said they’ll start planning for 2026.
