Weather could be affecting Maple Syrup

Less than one week and counting until the Elmira Maple Syrup Festival and while many of us were thrilled with the milder than normal winter, that has not been the case for maple syrup producers.
The recent warm up is cause for concern because once the nighttime lows start climbing above freezing the trees begin to ‘think’ it’s time to bud and that can cause the syrup to become bitter.
570 News Weather Specialist John Wilson says the good news is cooler conditions have now moved into the region, but what’s normally a short season for producers may be even shorter this year.
He says the fact very few places actually produce maple syrup is a chief reason while it can be on the pricey side.
The Elmira Maple Syrup Festival is this Saturday.
