Uptown’s Taco Farm to permanently close at the end of December

Announcing the news with “heavy hearts and exhausted spirits” via their social media channels, restaurant and food company Fat Sparrow Group has made the decision to permanently close their Taco Farm restaurant in Uptown Waterloo – citing a variety of factors leading to an “unavoidable truth.”

That decision was made public late last week, as Fat Sparrow offered its thanks to the community for making Taco Farm an “overnight success” back in 2013. 

“We are incredibly proud of everything we accomplished at Taco Farm, our team present and past, and we have gratitude for all the hard work, emotional investment and creativity that has gone into these four walls,” reads the company statement. “It's not easy running a restaurant, and Taco Farm never had it east, but our team always found ways to make it work.” 

In that same message, the restaurant group referenced several challenges that forced them to close the doors at Taco Farm – including rising costs, compacted issues from the COVID-19 pandemic and the “ever-changing landscape” that created a “hole too deep.”

“While we would have preferred to carry the success on indefinitely, we know that's not how restaurants work, and nine years is an accomplishment we will always hold our heads high for.” 

Fat Sparrow has clarified, however, that the Taco Farm brand of chips and other retail products will still be produced in St. Jacobs and sold all over North America – including at their own market & butcher in the village. 

Shortly after making the announcement on Friday, Taco Farm had noted that an electrical issue closed the restaurant for the rest of the week. 

Taco Farm will hold its last service on December 31, featuring a rock-and-roll send off with Waterloo country musician Nick Bordman. 

The company still carries a variety of enterprises under its banner, including Jacob's Grill & The Charcuterie Bar by Fat Sparrow, both located in St. Jacobs.
